Opened in October 2023,FURA is a pioneering drinking and dining destination committed to shaping the future of food through sustainability and creativity.

FURA translates to pine in Swedish, speaking to the symbiosis of the bionetwork between pine trees and fungi, each needing each other in order to survive. In the same way, FURA believes that we need to collaborate in order to survive.

FURA uses ingredients with a low carbon footprint that are readily abundant to show how we can all take steps towards sustainability. Christina and Sasha believe in making sustainable dining and drinking enjoyable, accessible, and approachable by fostering meaningful conversations, showcasing delicious flavours, and creating a vibrant dining destination that leaves a lasting impression.

FURA’s Journal of Future Food menu introduces guests to a range of exciting and planet-friendly options like insect proteins, cell-cultured milk and quail and coffee-free coffee.

It also features familiar ingredients such as corn and banana, which are either invasive species or available in abundance. FURA also makes an effort to use ingredients widely available in Asia such as gongura, fish leaf and borage grown by hydroponic farmers like GreenLoop Farms in Singapore. So You Bought Happy Corn (S$24), a callback to one of the cocktails from Volume One entitled So You Bought Sad Corn features Somma mafaldine pasta, charred Talula Hill Farm purple corn and corn cream. Others include the Jellyfish Ceviche (S$14) featuring an invasive spotted coral jellyfish, shredded and mixed with aguachile, dressed with caramelised pineapple and mandarin served with tortillas

A five-course tasting menu and cocktail pairing (S$145++) is also available at the 12 seater bar counter from Tuesdays to Thursdays.

The Journal of Future Foods cocktails highlight ingredients that are either in abundance, invasive or prevalent, with each drink themed around a star future food ingredient. The drinks list begins with light and refreshing cocktails, followed by sours, more spirit-forward selections, and finally, a selection of dessert style drinks. Several signature drinks from Volume One have remained on offer, including the much-talked-about Get The Worm, a savoury margarita infused with mealworms, the iconic Caviar Papi, the fizzy and refreshing Make Local Tomatoes Great Again and the signature Jellyfish Martini.

Highlights from the new additions for Volume Two of the menu include the 3 Crop Corn (S$24), which highlights the benefits of crop diversification for low carbon emissions and supporting regenerative landscapes. The name refers to a three-crop system with a small grain (represented by the sorghum grain from the Empirical Soka), summer legume (showcased in corn silk vermouth) and cover crop (a garnish of mustard frills from GreenLoopFarms). 

The cocktails are accompanied by UGLY DELICIOUS, a menu of fermentations in collaboration with freshveggies.sg, a local shop that sells the bar fruit and vegetables that would otherwise go to waste. This produce is then fermented in house as fruit wines, aiming to highlight food waste and alternative ways to use ingredients rather than letting them go to waste.

Our Ala carte experience is no fuss, no muss, and all about the vibe, Our Ala carte food menu are meant to be shared by the table, and we don’t know about you, but here at FURA, we believe we all have earned the right to a solo dessert.

For drinks, we have 2 drink menu to choose from, our main menu, Journal of Future Foods , comprising of 13 cocktails, and from our UGLY DELICIOUS section, 5 house fermented wines, and 5 non-alcoholic drinks. Our second menu, FURA,WHO?, comprising of 8 rifts on classic cocktail, a spirit and wine list

Experience the journal of future food pairing menu, this 6 course with 4 drink pairing showcases an experience of how we might eat in the future due to climate change.

For the Tasting menu experience, diners can choose between an Alcoholic ($145++) or a Non- Alcoholic ($125++) drink pairing.
